Eating at the best restaurants in the world is one of the reasons why I travel. And for the longest time, I have always been curious about Michelin food. Questions like, what is it really like to dine in a Michelin starred restaurant? Why are they so prestigious? What’s the big deal? Is the food really worth the exorbitant price? I needed some answers. So, with my hard-earned money and a camera on one hand, I jetted off to Singapore to get my Michelin fix!
I decided to dine at Joel Robuchon! It is the first and only 3 Michelin starred restaurant in Singapore! Owning 22 restaurants, Celebrity chef Joel Robuchon has 31 Michelin stars in total! What a legend in the culinary world! Undeniably, the “Chef of the century”!
8:00 pm: I arrived at Resorts World Sentosa. The moment I stepped into the main restaurant lobby, I was politely greeted and escorted to a corner table. I was seated in a lavish couch with plush throws! The lighting was gentle and soothing. It was impossible not to notice the stunning chandelier gracefully hanging in the middle of the restaurant surrounded by lush flower arrangements and lovely linens. WOW! That European high society feeling!
I sat in anticipation for my first dish. To my surprise, a bread trolley was wheeled to my table. Three full tiers of freshly baked goodness! I couldn’t stop popping baguettes, croissants & brioche in my mouth! Oh, I love my carbs!

Entrée: Light corn mousseline with crispy croutons beef jelly and black truffle

Elaborate, decadent and incredibly creative! Look at those decorative flourishes on the plate, just so perfectly executed!
1st service:
Shaved black truffle and potatoes topped with foie gras carpaccio

Duo of beetroot and apple, herb salad with green mustard sorbet

Chilled lobster, sweet and sour turnip ravioli, flavoured with rosemary

So far, so good! I had an enthusiastic waiter patiently explaining the dishes and answering all my queries! Service was flawless, and I seriously cannot fault the food! Dining at its finest!
2nd service:
Roasted frog leg risotto and watercress

Semi soft-boiled egg on spinach puree with comté cheese sauce

I didn’t expect to be served frog leg that night but I’m happy I got to try one! The balance of the spices, seasonings and herbs certainly wowed my tastebuds! Also, the egg is extra yum! I wish I could recreate this dish at home!
3rd service:
Pan-seared scallop coconut veloute and fresh coriander

Sea urchin, potato puree with a hint of coffee

Light artichoke mousseline with a cappuccino of chickpea and turmeric

Jeeeez! Those dishes were the bomb! Explosion of flavours in my mouth with every bite! Such exquisite creations by the chefs! Salute! My eyes could not believe how extraordinary the plates were presented! The dishes were exceptional at every level and met all my expectations!
4th service:
Crispy line caught amadai with aromatic red wine sauce

Caramelized black cod with bok choy and Malabar pepper sauce

Spicy bonito broth with fresh shrimps and fresh ginger

At this point of the night, I already felt so full, but the food was so superb I just could not stop! Good thing I was wearing a stretchy playsuit! Oh my gosh, now I know what haute French cuisine truly is! What a gastronomic experience!
Classical main course:
Beef chateaubriand and foie gras, “Rossini” style with potato souffles and port wine reduction

I have been waiting for my main course from the moment I read the degustation menu! I may not be a food critic, but I know that a Beef chateaubriand is one of the most expensive dishes you might ever encounter in a menu! And I could not wait to get a taste of it! Man, it was divine! The best part? it was served alongside a foie gras! Genius! I could not ask for more! This was the highlight of my night!
Oh, and finally Joel Robuchon’s signature mashed potato arrived! Super rich and ultralight buttery mashed potato goodness! Best mashed potato I have ever had! Wishfully thinking that one day he would share how to make that perfect purée!
Desserts:
Infused mix red fruits with rose champagne, vanilla cream and crispy biscuit

Traditional “bourdaloue” pear tart, delicate almond milk and caramel

Chestnut smoothness with orange sable and cranberry parfait

Aren’t they gorgeous? These treats were simply irresistible! Joel Robuchon really delivers!

Just when I thought my dining experience was over, A sorbet and a dessert trolley was wheeled my way! What a sight to behold! My sweet tooth was on cloud nine!
And last but not the least: The Michelin Starred Sorbet!

This place is truly worthy of its 3 Michelin stars. And I could not stress that enough! So, if you are in the mood for some serious splurging, spend an evening at Joel Robuchon! It may burn a hole in your pocket, but it is a culinary adventure you will never forget!
